Grown wild and hand-crafted Tieguanyin by Cha Zhi Ji. With his friends leading the way, the founder of Cha Zhi Ji overcame rocky terrain to visit an estate of wild tea trees located at high altitude on Bi Jia (literally ink brush stand) Mountain in Anxi, Fujian Province. The trees are tall and more than a hundred years old. During the visit, Mr. Henry Yiow met with respected master craftsmen of renowned Anxi Tieguanyin.
Using rare fresh leaves and time-tested Tieguanyin processing methods, these masters present a tea that epitomises the flavour of "the wild." The tea estate is committed to letting tea trees grow in their wild state, with no fertiliser used and no chemicals applied. During the harvest season, pickers with wicker baskets on their backs climb tall ladders to reach the tip of the branches for tender buds and leaves.
Plucked fresh leaves of wild-grown Tieguanyin undergo processing before undergoing 25 hours of roasting with fine charcoal made of lychee wood. The finished product sports curly strips and twigs, presenting the unique flavour in its entirety. Thanks to substantial oxidation, the leaves have a distinct red rim, yielding an inviting brew with a pronounced orchid and fruity aroma.
The clear, golden infusion is mellow and velvety, filling the mouth with moistening natural sweetness while promising depth on the finish in the back of the throat.
